Rosemary Chicken
 
 
INGREDIENTS
Serves 4
Prep time: 25 minutes

3 Tablespoons of Balsamic Vinegar
2 Tablespoons of Olive Oil, divided
3 Tablespoons of fresh Rosemary, chopped and divided
1/4 Teaspoon of ground Black Pepper
3 Garlic Cloves, minced
4 Portions of Chicken Breast (about 1 pound)
1 1/2 Cups of Water
1 Cup of plain Couscous
1 Pound of Broccoli Florets
2 Tablespoons of Pine Nuts
1 Lemon, halved
DIRECTIONS
  • In a pie plate, mix balsamic vinegar, 1 tablespoon of olive oil, 2 tablespoons of fresh rosemary, black pepper and garlic. Add chicken and turn to coat

  • Lightly coat a large skillet with cooking spray and place over medium-high heat. Place chicken in skillet and cook for 6 minutes. Turn and cook until no longer pink in the center, about 6 more minutes.

  • In a medium saucepan, combine water and remaining olive oil and bring to a boil over high heat. Stir in couscous, cover, remove from heat and allow to stand for 5 minutes. Fluff with a fork before serving.

  • While the couscous is cooking, place the broccoli in a baking dish with 2 tablespoons of water. Cover and microwave on high for 4 minutes. Stir broccoli and return to microwave until crisp-tender, about 4 more minutes

  • Slice cooked chicken. Place a portion of couscous on each of the 4 plates and top with a portion of chicken along with a serving of broccoli.

  • Top each with about a fourth of the pine nuts, remaining fresh rosemary and a squeeze of lemon. Serve and enjoy!
