Horseradish-Crusted Beef Tenderloin
 
 
INGREDIENTS
Serves 8
Prep Time: 15 minutes
Cook Time: 35-45 minutes

1 Teaspoon of Dijon mustard
1 Teaspoon of salt
2 Teaspoons of freshly ground pepper
1 Tablespoon of extra-virgin olive oil
2 Tablespoons of prepared horseradish
1 1/2 Cups of Horseradish Sauce (see below)
2 Pounds of trimmed beef tenderloin, center-cut, without fat

Horseradish Sauce Ingredients:
Prep Time: 5 minutes

1 Teaspoon of salt
1 Teaspoon of freshly ground pepper
1/3 Cup of prepared horseradish
1 1/3 Cups of reduced-fat sour cream

DIRECTIONS
  • Preheat the oven to 400°F.
  • Combine horseradish, oil and mustard in a small bowl. Cover tenderloin with salt and pepper; coat with the horseradish mixture. Tie the tenderloin with a kitchen string in 3 places. Transfer the beef into a small roasting pan.
  • Roast until a thermometer inserted into the thickest part of the tenderloin registers 140°F (medium-rare), which should take anywhere from 35 to 45 minutes. Move the beef tenderloin to a cutting board and let it rest for 5 minutes. Remove the string, slice and serve with Creamy Horseradish Sauce (see below).

    Horseradish Sauce Directions:
  • Combine sour cream, horseradish, salt and pepper in a medium bowl. Chill until ready to serve.
